Ichiran's Hakata thin straight noodles are made by experienced noodle craftsmen from a special blend of rare wheat flours, giving them a firm bite and a smooth texture. Ichiran's own formulation keeps the cooking water from clouding, so you can taste the broth as it is meant to be. The broth was developed through repeated trials by craftsmen working day and night, holding back the smell particular to tonkotsu while bringing out its rich savoury depth. The red secret powder is Ichiran's own spice blend, made from quality chillies sourced around the world and adjusted again and again for perfect balance.

The set also includes Kamadare Tonkotsu Ramen, normally only available at selected shops, in which a rich kamadare sauce simmered from char siu braising liquid is added to the savour of the tonkotsu broth for extra depth.
