Hakata thin straight noodles: made by experienced noodle craftsmen from a special blend of rare wheat flours, with a firm bite and a smooth texture. Ichiran's own formulation keeps the cooking water from clouding, so you taste the broth as it is meant to be. Broth: developed through repeated trials by craftsmen working day and night, holding back the smell particular to tonkotsu while bringing out its rich savoury depth. Red secret powder: Ichiran's own spice blend made from quality chillies sourced around the world, adjusted again and again for perfect balance. Also included is Kamadare Tonkotsu Ramen, normally only available at selected shops, where a rich kamadare sauce simmered from char siu braising liquid is added to the savour of the tonkotsu broth for extra depth.
